Dry Red Wine | Sheba Series

The Shiraz grapes come from the Upper Galilee and Southern Golan Heights. The Galilee region features a cool climate with low humidity and significant diurnal temperature variation in summer. The Southern Golan experiences hot, sun-filled days and cool, dry nights during ripening. These conditions allow for slow, even ripening and the development of rich color and aromatic complexity.

Grapes from both regions were night-harvested at peak ripeness. After destemming, they were transferred to 5–12 ton tanks for fermentation and flavor extraction. The wine remained on its skins for 2–3 weeks before pressing. Following malolactic fermentation and light clarification, the wine was aged for 12 months in 225-liter French and American oak barrels, about 25% of which were new. The final blend was crafted from the various plots and bottled with minimal filtration.

A fusion of New World winemaking with cool-climate fruit, this Shiraz delivers ripe fruit alongside bright freshness. Deep ruby in color, it offers bold aromas of ripe forest berries and white pepper, complemented by hints of smoke, chocolate, and roasted coffee. The wine has a full body, balanced acidity, and notes of ripe black fruit, herbs, and a long, harmonious finish.

Pairs beautifully with grilled meats such as spicy sausages, smoked meats, beef fillet with wine and mushroom sauce, or teriyaki-ginger salmon. Also pairs well with hard sheep cheeses and aged semi-soft cheeses like Brie.
