The vineyard plots combine basaltic soils with terra rossa on hard limestone, providing excellent aeration for the roots. The cool climate of the Upper Galilee features hot days and cool nights in summer, with low humidity levels—ideal for a long ripening season that enhances color, aroma, and flavor development in the grapes.

The grapes were harvested at night at optimal ripeness. After destemming, they were transferred to 5–12 ton fermentation tanks for maceration and alcoholic fermentation, remaining on their skins for 7–10 days. Malolactic fermentation followed, and the wine was then aged for 18 months in French oak barrels, one-third of which were new. The final blend was assembled from different vineyard lots, and bottled with minimal filtration.

This Cabernet Sauvignon is defined by restrained ripeness and a fine balance between freshness and rich, ripe fruit. The growing conditions produce deeply colored grapes with concentrated aromas and flavors, supported by fresh acidity and complexity. The wine exhibits a deep ruby-black hue and aromas of ripe blackberries, cherries, cassis, roasted coffee, and cooling mint. It is full-bodied, well-balanced, and generous, ready to enjoy now but will continue to develop over the next 4–8 years.
