After hand sorting and destemming , the grapes are cold soaked in tanks for three days. Alcoholic fermentation takes place for two weeks, after which the grapes undergoes an additional 15 days of skin contact before pressing. After a brief period of stabilization, each wine is transferred to predominately new French oak barrels to age for 15 months. The final blend is then selected from the various varieties and barrels and the wine is bottled after natural stabilization with minimal clarification and filtering. After bottling, the wine continues to age for at least one more year in our cellars.
Sapphire
The Sapphire is produced from Cabernet Frank and Shiraz grapes, combined with a small amount of Merlot grapes, all from our finest plots in the Golan Heights and Upper Galilee. This is a fruit-driven wine with great intensity and depth that showcases the vineyards of the region. A New World wine through and through, it’s ready to drink immediately upon release, but will still reward after sometime in the cellar.

The Sapphire is a full-bodied, rich, balanced and concentrated wine with a long, rich and generous finish. It is drinkable immediately, but will continue to develop in proper storage for five to eight years after its vintage date.
