Planted at 440 meters above sea level, the vineyard overlooks the Beit She’an Valley. The soil is a combination of hard and soft limestone, terra rossa, and dark earth. Despite its proximity to the hot valley, the area enjoys cool winters and strong winds year-round, ensuring a dry climate and cool nights. These conditions preserve the natural acidity of the grapes and support slow, balanced ripening. Nearby wind turbines supply green energy to surrounding communities.

Grapes were harvested at night under optimal ripeness and arrived at the winery by dawn to preserve their delicate aromas. After destemming and gentle pressing, the juice was clarified and fermented at low temperatures in both stainless steel tanks and French/American oak barrels. Partial malolactic fermentation was employed. The final blend was assembled from both tank- and barrel-fermented components.

This Chardonnay offers layered complexity thanks to a combination of barrel and tank fermentation, along with partial malolactic fermentation. The wine displays a golden hue and aromatic richness, with clear notes of fresh citrus, ripe peach, melon, and hints of vanilla. It has an elegant, multi-layered mouthfeel, well-balanced oak integration, and a long, satisfying finish.
