The Cave – Old Vines
Carved in the late 16th century during the Ottoman Empire, the cave’s arched structure maintains perfect natural storage conditions for wine—complete darkness, humidity never below 80%, and a stable temperature of 18°C. Since 2000, it has been used for what it suits best: aging fine wines.
The Cabernet Sauvignon grapes are sourced from Ben Zimra vineyard, planted in the early 1980s in well-aerated basaltic soil. Decades of attentive viticulture, optimal climate, and vine age have resulted in naturally low yields of 500–700 kg per dunam. Harvesting at peak ripeness ensures balanced, fully mature fruit—ideal for producing a prestigious expression of the winery’s craftsmanship.
